Description Amaranthus gangeticus ‘Carnival’ is commonly known as Joseph’s coat and aptly named for its vibrant, visually striking ornamental and edible foliage and plumes of flowers. Grown as an annual, this cultivar will more than pay for its time in the sun with its multi-coloured foliage in fiery yellows, reds and bronzes to spectacular visual heights up to four feet tall. The upright spikes of purple flowers bloom in late summer turning to attractive seed heads. Young tender leaves can be used in salads or cooked. The seeds are also edible and nutritious. Very easy to grow, low maintenance and heat-loving. Requires moderately fertile, humus rich, moist and well-drained soil. Drought tolerant once established. Use as a vertical garden accent, in borders, veggie gardens and containers. Bee attractor.
